Morrocan Zucchini Salad


Cube and cook 7-8 minutes:
750 gm fresh zucchini                      ¼ c olive oil
2-3 cloves garlic                               1 t salt
1 t paprika                                         3-4 T water

Add and simmer until reduced and cooked but not mushy:

2 T lemon juice                                 2 T chopped fresh parsley
