Israeli Eggplant in Tomato Sauce
Slice & salt eggplants, 1 hr to drain
Fry eggplant slices
(also red pepper slices – optional)
Sauce:
1/3 c ketchup
2 T white wine vinegar
3 crushed cloves garlic
Salt
Chopped parsley
