Cole Slaw

Cole Slaw

1 medium head green cabbage
2 large carrots                                  1 green pepper

Dressing:                                OR                   Marinade:
¾ cup mayonnaise                                     2 tablespoons salt
1/3 cup vinegar or lemon juice                            1 cup vinegar
1 teaspoon salt                                                         2 cups water
2 tablespoons sugar                                                ½ cup sugar
4 tablespoons warm water                                    1 teaspoon pepper
                                                                        2 tablespoons mayonnaise

Shred or slice thinly cabbage, carrots and peppers.
Mix dressing or marinade, and pour over vegetables, toss; Cover and refrigerate until ready to serve.

Note: If using marinade, allow to sit in refrigerator at least 1 hour before serving. Drain off marinade before serving.
