Moroccan Carrot Salad

Moroccan Carrot Salad

6 – 7 carrots, in rounds – boil briefly, rinse
3 T lemon juice
2 T olive oil
2 cloves garlic
½ t cumin
½ t paprika
S & P to taste
Boil & pour over carrots
Optional: ¼ c fresh cilantro
