Hearty Pea Soup

1 onion              \                               1 c split peas   \

2 T oil                 \  saute                   ¼ c barley         \  add + boil

1 bay leaf            /                             ½ c lima beans  /  cook 90 min

1 tsp celery salt /                              10 c water        /

1 t salt             ½ t basil                              \

2 carrots          3 stalks celery, chopped       \  add, simmer

Pepper             ½ t thyme                             /  30 – 45 min

1 potato, cubed                                           /

Stir occasionally so the bottom doesn’t stick and burn. Freezes well.
