Lentil Stew

Lentil stew

Chop & sauté:
1 large onion                         3 cloves garlic
2 celery stalks                       1 tsp margarine
1 tsp oregano                        2 tsp basil

Add and simmer 10 minutes:         2 c chopped tomatoes         
   1 c water

Add and simmer 2 hours:  
3 carrots, sliced          2 potatoes, cubed
¼ c barley                   ¼ c brown rice
1 c lentils                    1 block tofu, cubed
½ c soy sauce               c water


serves 10
