5 min chocolate mug cake

 5 min chocolate mug cake


4 Tbsp flour 4 Tbsp sugar

2 Tbsp cocoa 1 egg

3 Tbsp milk (or water) 2.5 Tbsp oil

2.5 Tbsp choc chips (optional)

Splash vanilla 1 large coffee mug


Dry, then egg, mix. Pour in milk and oil, mix well, 

choc chips and vanilla, mix again.

Put mug in microwave and cook 3 minutes on high

Cool and eat!


Szechuan Pasta Salad

 Szechuan Pasta Salad


1 lb thin spaghetti, cooked 1/3 c soy sauce

¼ c peanut or sesame oil 1 c mayonnaise

6 scallions 2 carrots, chopped

1 red pepper, chopped 1 can baby corn or regular corn

½ c parley, chopped 1 c peas (frozen


Mix soy, oil and mayo. Pour over everythinge lse, let sit for a few hours before serving.


Potato or Pasta Salad

around 10 medium-sized potatoes  \ boil together, in small chunks,

1 teaspoon salt             ]

2 medium carrots                                     / til soft (@30 min). Cool.


1 green pepper 1 red pepper              \ dice and toss in

2 pickles ½ cup frozen peas   / 


Dressing stuff:

6 tablespoons mayonnaise 2 tablespoons lemon juice or pickle juice

1 teaspoon salt ½ teaspoon garlic powder

¼ teaspoon pepper


May be served warm or cold

  •  For Pasta Salad, you can use 250 grams of spiral noodles instead of potatoes. Boil them according to the directions on the package, and do the rest of the recipe the same.

Baked Ziti

 

Baked Ziti


1 bag ziti noodles (1/2 kilo) 1 jar tomato sauce (around 500 grams)

2/3 cup water 2 containers cottage cheese

300 grams yellow cheese 1 teaspoon parsley flakes

1 teaspoon garlic powder


Boil and drain noodles; preheat oven to 175°.

Mix noodles, cottage cheese, and ½ the cheese together.

Mix the tomato sauce with water. Cover the bottom of a big pan with ½ the tomato sauce.

Put noodle mixture into the pan.

Cover with the rest of the sauce. Sprinkle on spices.

Sprinkle the rest of the grated cheese on top.

Cover with foil, and bake for 30 – 40 minutes.

Uncover the pan for the last 10 minutes if you like crusty cheese on top.

1 large head lettuce

½ golden delicious apple cut in small chunks (with peel)

½ red apple                  

¼ c chopped dates

grated carrot                           

grated cabbage (or fried leek)

pumpkin seeds



dressing: 

¼ c oil                                     

2 tsp vinegar

1 tsp minced scallion              

2 tsp honey

1 tsp mustard                         

½ tsp salt

¼ tsp garlic                   

pinch cayenne pepper

WAFFLES

THE ULTIMATE WAFFLE RECIPE – 

makes 4

 

·         1 3/4 Cup Flour                                  

       2 1/4 Tsps Baking Powder

·         1/4 Tsp Baking Soda                          

       3 Tbsp plus 1 Tsp Sugar

·         1/2 Tsp Fine Sea Salt                   

       3 Large Eggs

·         3/4 Cup Buttermilk                

       3/4 Cup Heavy Cream

·         1/2 Cup Unsalted Butter, melted and cooled slightly

 

In a bowl, whisk together the flour, baking powder, baking soda, corn starch, sugar and salt. In another bowl, whisk together the eggs, buttermilk and heavy cream.

 

Using a wooden spoon, stir the wet ingredients into the dry ingredients until a few streaks of flour remain, but the batter is almost mixed together. Add the butter and stir until just combined.  Important!! Allow to rest for 15-30 minutes.

 

Pour about 1/3 cup onto the iron and cook per instructions.

Secrets to the Best Homemade Waffle Recipe – makes 4-5

 

3/4 cup flour                                           

1/4 cup cornstarch

1/2 tsp baking powder     

1/4 tsp baking soda

1 Tbsp sugar                           

1/2 tsp kosher salt

1 cup milk                                                    

 1/3 cup oil

1 large egg                                                   

1 tsp vanilla extract

Butter, syrup and/or berries, for serving

 

Whisk the flour, cornstarch, sugar, baking powder, baking soda and salt in a bowl. In another bowl whisk the milk, vegetable oil, egg and vanilla together until blended.

Pour the milk mixture into the flour mixture and whisk until just mixed. Set batter aside for 10 to 15 minutes so the baking powder has time to activate.

 

Heat the oven to 200° F. Pour the batter onto the heated waffle iron and cook until the waffle is crisp and golden brown. Set the cooked waffle directly on the oven rack to keep it warm and crisp. Don’t stack the cooked waffles

THE VERY BEST WAFFLES – makes 5

 

·         3/4 cup  flour         

       1/4 cup cornstarch

·         1/2 tsp salt                                       

        1/2 tsp ground cinnamon

·         1/8 tsp ground nutmeg                          1/2 tsp baking powder

·         1/4 tsp baking soda                                3/4 cup buttermilk

·         1/4 cup milk                                        

       1/2 tsp vanilla extract

·         6 Tbsp vegetable oil                      

         1 Tbsp sugar

·         1 large egg separated

·          

Heat the oven to 200°F. Mix the flour, cornstarch, salt, cinnamon, nutmeg, baking powder, and baking soda in a bowl. Measure the buttermilk, milk, and vegetable oil in a measuring cup and stir in the egg yolk. Set aside.

 

In another bowl, beat the egg white almost to soft peaks. Sprinkle in the sugar and continue to beat until the peaks are firm and glossy. Beat in the vanilla.

 

Pour the buttermilk mixture into the dry ingredients and whisk until just mixed. Drop the whipped egg white onto the batter in dollops and fold in with a spatula until just incorporated. Pour the batter onto the hot waffle iron and cook until the waffle is crisp and brown.

Set the waffle directly on the oven rack to keep it warm and crisp. (don't stack them).

Quick & Easy Homemade Waffles – makes 5-6

 

1 3/4 cups flour

1 Tbsp baking powder

1/2 tsp salt

1 3/4 cups milk

2 large eggs

1/2 cup melted butter

1 tsp vanilla extract

 

Whisk the flour, baking powder and salt together in a medium bowl. In another bowl, beat the milk, eggs, melted butter and vanilla extract. Pour the milk mixture over the dry mixture and stir with a fork until just combined. Let sit five minutes to “develop” (just a fancy word for letting the baking powder activate).

 

Meanwhile, heat your waffle iron. Pour, or ladle, enough batter to cover about 2/3 of the surface (the rest will spread once you close the top). Most waffle irons have a handy light that goes on or off, signaling the waffles are ready. A sure sign of doneness is once you see all the steam has stopped shooting out.

 Amazing Salmon Quiche 

Crust: 
2 c whole wheat flour 
1 t sesame seeds 
½ t chili flakes 
1 t mixed dried herbs 
1/3 c oliveoil 
1/3 c water
S & p 

Mix to smooth dough, rest 30 minutes in fridge, roll to fit pan 

Filling: 
1 c frozen spinach, drained 
2 cloves of garlic, chopped  
1 onion, diced & sautéed 
1 t balsamic vinegar  
1 can or ½ lb salmon, cubed  
1/3 c heavy cream 
1/3 c milk
3 eggs 
1 ½ T dill chopped 
1 T chives 
1 T olive oil
S & p 
Optional: feta cubes 

Layer onions, spinach, feta, salmon. Pour egg mixture over, sprinkle chives on top. Bake 45 - 60 minutes at 175 degrees

 

BONNIE's BOBKA

Dough

7 cups all purpose flour plus 1 additional cup, if necessary

4 1/2 T instant yeast                                              

3/4 cup sugar

1 T vanilla sugar                                                      

1 1/2 cups margarine, melted

1 3/4 cups warm water                                        

2 large eggs

2 yolks                                                                       

2 t salt

 

In a large bowl, combine all

Turn onto floured surface and knead 5 minutes. Adding up to 1 cup of flour if necessary

Allow to rise in a large bowl for 1 1/2 hrs

 

Chocolate Filling

1 cup margarine                             1 (4.1 oz) box instant chocolate pudding

1 large egg                                       1/2 cup water

2 cups sugar                                    1 cup cocoa

Combine all and set aside

 

Crumb topping

1/2 stick margarine                       1 cup flour                1 cup sugar

Crumble together using fingertips

 

Spray 4 (10-inch) loaf pans

Divide dough into 8 pcs

Roll into a 1/8 inch thick rectangle, the length of the loaf pan.

Spread 1/8 of the filling onto each rectangle, within 1 inch of the borders.

Roll from the long side like a jelly roll.

Twist 2 rolls around each other and place a twist in each pan.

Using all the crumbs, sprinkle 1/4 of crumbs on top of each bobka.

 

Preheat oven to 350 degrees. Allow to rise 30 minutes, then bake 30 minutes.

When cool enough to handle, remove from pans and cool on a rack.
