Crockpot Beef Stew

serves 8-10

4 T olive oil
2 t minced garlic
1 kilo beef, in ubes
1/4 c flour (tossed with meat to coat)
10-15 small red potatoes
1 medium onion, chopped
2 c slice carrots
2 c sliced celery
1 c red wine
1 c water
1 can diced tomatoes (14.5 oz)
1 bay leaf
1/2 t dried thyme
1 t dried parsley
1/2 t allspice
mushrooms (optional)
2 t cornstarch

Coconut Rice

1 c jasmine rice
1 c canned coconut milk
1 c water
1/2 tsp salt

Simmer in covered saucepan around  15 minutes, until liquid is mostly absorbed. Let stand for 10 minutes before fluffing and serving. May garnish with lime wedges or fresh coriander.

Wheatberry Salad Variations

1 c wheatberries
2-3 c water
1 1/2 Tbsp oil
2 Tbsp orange juice
1 Tbsp red wine vinegar
1 tsp coriander, ground
2 apples - cut into small dice
1 Tbsp mint, fresh, fine chopped
s+p to taste
1/2 c cashews
1/4 tsp caraway seeds (optional)

Cook wheatberries and water until tender, about 1 hr
Add all other ingredients and mix

Other variations (pick and choose, don't use all):
red onion, chopped or thinly sliced
craisins
chickpeas
carrot, chopped
garlic
cherry tomatoes

No Sugar BBQ Sauce

1 cup tomato sauce
8 dates, pitted (soak if they are too hard)
1/2 tsp pepper
1/2 tsp sea salt
1/2 tsp onion powder
1 tsp yellow mustard
4 cloves garlic
1 tsp apple cider vinegar
1/2 tsp liquid smoke
1 tsp soy sauce

optional: cumin, cinnamon, cayenne

mix and blend well

Raw (avocado) chocolate pudding

1 avocado
1/2 cup dates or banana
3 Tbsp cocoa powder
1 tsp vanilla
less than 1/2 cup liquid
1/8 tsp salt
3 Tbsp coconut oil (optional)

Blend well and refrigerate

Vegetarian Chopped Liver - lentil version

3 cups cooked lentils
1 large onion, diced and fried
1 cup walnuts
1 1/2 cups tamari sauce
1 Tablespoon miso (optional)

combine all in food processor with S blade, process until smooth enough for your preference
